Eggplant and Prosciutto Pizza

If you’re looking for some good tips on growing eggplant, I am not the person who you should be talking to. I planted my eggplant seeds back in January and here is the plant today.

My eggplant plant is a mere 7″ tall. <sigh>

It’s a sad state of affairs. After transplanting the seedling, it became clear very quickly that it wasn’t growing to my liking. So I went to the neighborhood nursery and bought two more eggplant plants. These plants are growing, but between the two I only got one eggplant so far! And the variety of eggplant that I have produce small fruit so the eggplant was not big enough to make ratatouille, eggplant parmesan, or some of my other favorite dishes. So what did I make? Pizza of course!

For such a disappointing harvest the eggplant tasted very good. And the pizza turned out great! My husband and I make pizza almost every week and this is my favorite pizza we made this summer.

To make the pizza I started with my homemade pizza dough. (You can find the recipe here.) I topped the dough with garlic olive oil, eggplant (thinly sliced on a mandoline), prosciutto, mozzarella and romano cheese. Then after the pizza came out of the oven I topped it with some shredded basil from the garden. It was delicious!
