Parsley Doughnuts

Yes, you read that right: parsley doughnuts. I have too much parsley in my garden so I’m on the hunt for every parsley recipe ever made. One of my favorite cookbooks is Sarah Owens’ Sourdough, and in this cookbook she has a recipe for parsley doughnuts. A hefty amount of parsley and a fair amount of mint are added to the dough. And the doughnuts are topped with a vanilla and orange glaze.

As I pulled them out of the fryer my soon-to-be-three-year-old told me “I loooooove doughnuts”. He bit into one and exclaimed “There’s salad in my doughnut!” I figured I was caught at that point and he was going to eat no more. But no. They were that delicious. He ate more… many more… despite his disdain for salad.
