Parsley Pesto Pasta

This dish is a new favorite of mine. It gives me the opportunity to use a ton of fresh parsley from my garden, it’s satisfying, and it’s got some great flavors. The fried onions on the top are a must – they make the dish! I like to use homemade cavatelli pasta for this recipe, but any pasta with deep ridges would do great in this dish.
