I had my first spearmint harvest this weekend. I think we can all agree that where there is mint, there is a mojito. I do like a classic mojito, but I also have a preference for dark rum. So I charged my husband with making me a mojito-ish cocktail while I made ziti pasta by hand. (Talk about a productive weekend.)
My pasta turned out awesome and my husband did a good job making us cocktails. So good, in fact, that I made him write down the recipe so it could be shared. And now, let’s get to it…
Ingredients (per drink)
Half of a lime, cut into small wedges
The leaves from one stalk of spearmint
1 teaspoon sugar
1-1/2 oz dark rum
Add the lime, spearmint and sugar to a shaker and muddle the ingredients.
Then add the dark rum and shake.
Pour in a glass, over ice.
Top with club soda.
Garnish with lime and spearmint. Enjoy!
